Good & Good for You Pizza

Ingredients:
1 bag of baby spinach
2 portobello mushrooms, sliced chunky
1 bag sundried tomatoes
5 cloves garlic, chopped
4 oz jarred olive topenade
1 red bell pepper, chopped into bite size chunks
olive oil
8 oz goat cheese
pizza dough
Directions:
In a pan, cook down the vegetables (spinach, red bell pepper, mushrooms,
garlic, sundried tomatoes) in olive oil until tender.
On pizza crust, spread the olive
topenade and add vegetable mixture onto pizza crust.
Add goat cheese on top very
generously in big chunks. Bake until crust is done, approximately 25
minutes.
After baking, let rest for 5 minutes. Cut and serve.

Ingredients:
5 large sugar cookies (already
baked)
1 cup fresh raspberries
¾ cup white chocolate morsels
buttery toasted almonds (to make these, chop almonds and sauté in butter
until fragrant)
butter
pizza dough
dark chocolate ice cream topping (for drizzling)
Directions:
Butter the dough.
On top of dough, crumble cookies.
Add raspberries and white
chocolate morsels on top.
Then add the buttery toasted
almonds.
Bake for 25 minutes or until
crust is light golden brown.
After baking drizzle with icing (recipe is below) and dark chocolate ice cream topping. Cut and serve
For icing, mix the following in a
saucepan on low heat:
2 cups powdered sugar
½ cup water
2 TBSP butter (slightly melted)
1 tsp vanilla
